Elephant Grounds’s Scrambled Eggs and Bottarga Toast
If you’ve ever encountered rave reviews for the Elephant Grounds Café in Hong Kong, then you’ll be happy to know that you don’t need to pay for expensive airfare to get in on the hype. Having recently opened its doors in BGC, Elephant Grounds Manila serves the same crowd-pleasing coffee, with worthy inclusions of selected brunch mains created and handcrafted by Chef Nicco Santos. Worth mentioning is their take on the simple eggs and toast. Incredibly silky scrambled eggs with smoked tinapa, bottarga, sun-dried tomatoes, and mushrooms over sourdough toast, topped with alfalfa sprouts and served with a small side salad make for an interesting but satisfying dish.

Desiderata Lounge’s Scotch Egg
If you’re looking for egg dishes that are prepared in a slightly different way, Desiderata Lounge’s Scotch Egg is a textural treat — picture a soft-boiled egg combined with bacon bits, and then deep-fried for a crunchy exterior.
